My apologies...
Sorry I've been such a slow blogger with you lately! ...Not my intention at all, but school and some recent medical issues have come up unfortunately....So I apologize and to make it up to you, Ill share a yummy dish that I made for lunch the other day! You will need chicken, 1 medium sweet potato and asparagus. For the chicken I used mrs. Dash fiesta lime, sea salt, pepper and lemon juice.
To marinate the chicken slice half of a lemon and drizzle juice over chicken, sprinkle pepper, sea salt and mrs. Dash fiesta lime (let marinate for about 30min) while chicken is marinating...boil a medium sweet potato for about 25-30min. Grill chicken over low-medium heat and cook some asparagus in the same pan with some minced garlic. When sweet potato is done...(test with a fork if it pierces through easily) slice in half and add a little butter (optional) and cinnamon enjoy!

Paleo inspired dish
So I've been hearing about the paleo diet lately and decided to read about it..i was pretty impressed...NO hoax or gimmicks...just simply eating clean based on foods that our ancestors consumed...so while strolling around trader joes earlier, i eyed some "beefless ground beef" which consists of soy and protein etc... now I know it's vegan and paleo diet does not consist of vegan recipes since a lot if the protein comes from the meats, but I made up a meal inspired by the paleo diet. Boil water with a little bit of olive oil and add chopped sweet potato...while potatoes boil, sauté onions and mushrooms over medium heat with olive oil. Next add the "beefless beef" and season with pepper and garlic powder and chopped up broccoli. Drain the potatoes and mash until completely mashed and smooth. Serve over the "meat" and enjoy..which I'm sure you will since my 11 month old did!

Turkey burgers please!!!
For lunch today, I was craving something light...like a shrimp, salad with quinoa or some thing along those lines as long as quinoa was on the menu, but hubby declared that shrimp quinoa salad wasn't a manly, fulfilling meal so I then i thought of quinoa turkey burgers! And I must add that it was brilliant..and easy! The quinoa I purchased is from trader joe's, frozen isle with sweet potato and zucchini already mixed in! Just pop the quinoa in the microwave for 6 in a half minutes and scoop onto your turkey burger!...Filling and delicious!...since turkey can taste a little plain be sure to add onions, mixed garlic, a teeny bit of worchestire sauce and seasonings such as mrs. dash fiesta lime, pepper and garlic. Enjoy!!!

Protein pancakes
I don't know about you, but I absolutely love food. I would say food definitely brings my family together. My husband hasn't been much of a fan of my "health food" since I changed my eating habits, but if you throw in the word protein and pancake in one sentence he's so down. So browsing through Trader Joe's the other day, I picked up some ("no preservatives") pancake/all purpose baking mix (picture below) and whipped up some yummy pancakes! The box has the directions on how to make the pancakes but I added two egg whites as opposed to an egg and 1 teaspoon of cinnamon you can even add some unsweetened organic apple sauce! And of course a scoop of your vanilla protein powder. Enjoy! P.s I drizzled mine with honey
